Kerri Garcia is running the coop, so to speak, as she prepares to move her Keto On with Kerri business into its own store at 619 N. Rock Road (the old Taco Bell location) later this month.
After starting to sell her products at the COOP bakery on Baltimore Avenue, the expanded space quickly became a necessity for Garcia—and the goal was always to have a brick and mortar building.
“We just outgrew The COOP so quickly. We started with three shelves and then quickly grew to two windows and a little storage space and eventually we had to start pre-ordering on my website because we were pushing our limits,” Garcia said. “It got to the point where I couldn’t produce how we were cooking anymore.”
Along with the range of ketogenic food products that Garcia already offers (ie pies, cakes, pastries, pizzas, pre-made meals, etc.), the new store opens up the opportunity to sell a number of products that Garcia distributes – such as Nat, Nu Skin and more, with plenty of shelf space at the new “all things keto” location.
Garcia also plans to carry other health food products at her store, including Perfect Plate and Nice Bites. On a related note, the Perfect Plate location in Maize will also stock a number of Keto On with Kerri products.
“I want it to be health and nutrition [spot] for people who have that specific allergen that’s hard to find,” Garcia said of the overall theme of the new store — which will have a parking lot for pickup orders.
In addition to the partnerships, Garcia is expanding his own line of products in anticipation of the new store opening, bringing bierocks into the mix.
“Bierocks is something new that we started a few months ago — beef bierocks and then we did breakfast bierocks — and they flew off the shelves,” Garcia said.
Right now, she said she’s experimenting with other varieties like chorizo, pizza and reuben. Additionally, while coffee and tea will be offered free with the meal, Keto On with Kerri’s Store will be selling keto cream soda-based drinks behind the counter.
Having an on-site kitchen at the new store will also allow Garcia to have daily specials — like avocado stuffed with chicken salad — Monday through Friday, which will be noted on an electronic board. A limited amount will be available, but Garcia will also continue to sell his ready-to-eat chilled meals that customers can reheat themselves in-store.
Given the extra seating and space, Keto On with Kerri is also looking to add an educational element to their new store on Rock Road.
“We want to expand to where we can start offering classes. We have enough seating where we can do that, and we can start offering classes for people to learn the keto lifestyle,” Garcia said. “I’ve been doing keto for almost three years, so I have enough knowledge to be able to help people learn what keto is and what those requirements are.”
Located across from Darby High School, Garcia also noted the store will have a take-back board to help students and act as another educational element about healthy eating.
Up to eight employees, Garcia hopes Keto On with Carey will continue to grow. After opening her new store, she hopes to take mobile on the keto mission and provide that option through catering and even out-of-area delivery, given the distance hurdle that presents itself for some customers.
“We hope at some point we can get to a distribution base and do that because every day we get people from other countries asking for our services,” Garcia said.
Keto On with Kerri will be open 8am to 7pm Monday to Saturday and 10am to 5pm on Sundays. A grand opening – with samples on offer – is planned for July 16.
